White Pizza with Mascarpone and Smoked Mozzarella Recipe

Ingredients:

1 large Boboli pizza shell
1 tbsp. olive oil
1/2 cup ricotta cheese
1 tsp. fresh oregano, chopped
or
1/2 tsp. dried oregano
2 garlic cloves, chopped
8 ozs. smoked mozzarella, grated
1/4 cup mascarpone
1 tsp. fresh thyme, chopped
or
1/2 tsp. dried thyme
Salt and freshly ground black pepper

Directions:

Oven should be preheated around 450′ F. Mozzarella should now be grated and then set aside. For the herbs, if you are using the fresh ones, chop a lot of them and measure out 1 tsp. for oregano and thyme.

In a bowl, mix together 1/4 cup of mascarpone and 1/2 cup of ricotta then season some salt & lots of pepper and be sure to blend them well. Put the Boboli shell on the baking pan then brush pizza crust with 1 tbsp. of olive oil.

Using a clean spatula evenly spread out ricotta & mascarpone mixture on the Boboli shell.

Layer grated mozzarella on top and sprinkle with fresh chopped herbs and the garlic. Bake in oven for about 15 mins. or just until cheese bubbles and pizza is heated through.

Take out pizza from oven then let cool for about 2 mins. prior to slicing them in pieces.
