Cheesy Pepper and Mushroom Pizza Recipe
Ingredients:
1 1/2 cup all-purpose flour
1 teaspoon cooking oil
1 package active dry yeast
1 egg
1/4 teaspoon salt
1 teaspoon cooking oil
1 tablespoon cornmeal
2 tablespoons grated Parmesan cheese
1 clove garlic, minced
3/4 cup low-fat cottage cheese, drained
1/2 teaspoon sugar
1/8 teaspoon pepper
1 teaspoon dried basil, crushed
1 cup sliced fresh mushrooms
1 medium green or red sweet pepper
1 cup shredded part-skim mozzarella cheese
Nonstick spray coating
Directions:
For the dough: Combine together salt, yeast and sugar in an electric mixer then add in oil & about half a cup of warm water (120′ F). On low speed on the mixer beat the ingredients well for 30 secs.
Increase speed to high and continue to beat for another 3 mins. Add in the remainder of flour.
Start kneading the dough on a lightly floured flat surface so that a kind of stiff pizza dough forms and feels elastic and smooth (takes 5 mins.).
Form dough in a ball and put inside a well oiled bowl and turn it around so all sides of the dough are coated well.
Cover with cloth or towel and allow to rise in a warm area until it doubles in size (30 mins.). After 30 mins. is up, punch dough down and cover again to allow it to rest for another 10 mins.
Lightly flour any surface and roll out dough in a 14-inch round shape. Put the dough inside a pizza pan that has been sprayed with some nonstick cooking spray and dusted with some cornmeal.
Form a rim around the edges then bake the crust for 10 mins. at 425′ F until it becomes light brown.
Mix inside a blender the pepper, salt, parmesan, egg, basil and cottage cheese until it appears smooth. Evenly spread out this mixture on the pizza crust.
Slice the green peppers in rings and place them on top the pizza with some mushrooms. Finish with a sprinkling of shredded mozzarella and bake once more for 10 mins. at 425′ F until it is heated through.
