Barbecue Chicken Pizza (Superbowl) Recipe
Ingredients:
1 (16-oz.) Boboli (baked cheese pizza crust)
2 large boneless chicken breast halves
2 tbsps. olive oil
1/2 cup hickory-flavored barbecue sauce
3/4 cup red onion, thinly sliced
7 ozs. Coarsely shredded smoked Gouda cheese
1 chopped green onion
Directions:
Oven should be preheated to around 450′ F for about 30 mins. Rack should be positioned at the oven’s center then place a baking sheet on the rack.
In a skillet on medium-high flame, heat some olive oil then saut� chicken that has been seasoned lightly with some pepper and salt. Cook the chicken for 5 mins. on each of its sides and make sure that it is thoroughly cooked. Place chicken on a plate and let it cool for 5 mins.
Slice the chicken in 1/3 inch-wide pieces crosswise and using a slotted spoon, place the chicken on a bowl and toss it with 1/4 cup of the barbecue sauce. Sprinkle half the shredded cheese onto the Boboli and then layer out the slices of chicken and space them evenly on the pizza crust.
Spread remainder of the barbecue sauce in the bowl and sprinkle the slices of red onion on the chicken strips then drizzle 1/4 cup barbecue sauce.
Layer the other half a cup of the cheese & green onions then transfer the pizza on a heated baking sheet to bake for 14 mins. or just until cheese is melting and crusts’ bottom has turned crispy. Let the pizza cool for 5 mins. prior to serving.
