Artichoke Pepper Pizza Recipe
Ingredients:
,1 (1-lb. size) cooked pizza crust (like Boboli)
,1/4 cup light mayonnaise
,1 cup artichoke hearts
,1 tsp. olive oil
,1/2 cup feta cheese, crumbled
,1 med. red bell pepper
,2 cloves crushed garlic
,1/8 tsp. black pepper
,1 cup mozzarella cheese, shredded
,1/8 tsp. red pepper
,1/2 tsp. thyme
Directions:
Slice the bell peppers in strips. Into a small skillet, heat olive oil and saut� half of garlic for about a minute. Inside a blender or food processor, combine artichokes, black pepper, red pepper, mayonnaise and garlic until they are chopped finely.
Onto a baking or cookie sheet, put the cooked crust and evenly spread out artichoke mix to about half an inch at its edge. Layer out the slices of bell peppers then sprinkle mozzarella, thyme and crumbled feta. Bake inside the oven for about 14 mins. at around 450′ F.
